Received a last minute dinner invite and need something sweet to bring the host? I’ve got you covered faster than you can slick on a second coat of mascara.
I’ve adapted this recipe from the domestic goddess herself but unlike Nigella, I didn’t have any double cream to hand so I substituted some nut milk instead. I can confirm it still tastes delicious. I also picked up a chocolate chip brioche loaf from Aldi which made the task much faster too but you can use whatever brioche you can lay your hands on.
As always, oven on first to gas mark 6 / 200°C / 400°F.
Grease an ovenproof dish with just enough butter to allow the brioche a bit of wiggle room.
Slice up your brioche and overlap each slice as you cover the dish. Scatter over a handful of dried cranberries – fresh ones are usually a little too tart for this – and some chocolate chips if your brioche doesn’t already have them in.
Next heat 290ml milk, 100ml double cream, 1.5tsp vanilla extract, 1/4tsp cinnamon and 1/4tsp nutmeg over a moderate heat making sure it doesn’t boil over.
While that’s happening you want to add 3 eggs and 3 egg yolks to a bowl and whisk together. When it looks like your pan might be ready to start boiling whip it off the heat and add the eggs plus 2tsp cornflour. Mix very lightly – careful not to scramble your egg and return to a low heat for 3 mins. Your mixture will start to thicken into a custard.
Once your custard has thickened a bit pour it over your brioche and pop into the oven for about 8mins or until cooked. Allow to cool slightly, dust with a little icing sugar and you’re ready to party.
