Easy bake: Almond, Blackberry and Cardamom Cake (Gluten Free)

Is anyone still reading this old blog of mine?!  Once again work and life have forced my wee corner of the internet to take a back seat and once again I can only apologise!  Does anyone else ever feel like face-planing the bed when they get home from work?

Between work and sleep I managed to stay awake just long enough to shoe horn in a few wee trips here and there setting sail in Scotland and taking a wee jaunt to Iceland – more on those later!  I’ve accumulated lots of wee bits to share with you so you can hopefully hear a lot more noise coming from Tales of Adventure in the coming weeks.

As the title of this post suggests I want to share a gorgeous little gluten free number with you – and just in time for Father’s Day!  If you follow me on Instagram you’ll already know that this recipe is a big hit with my dog, Bob, even though he had no chance of snaffling any of it.  Poor Bob!

Again, it’s taken from my go-to baking book and, again, it was a great big HIT with my family after Sunday lunch.  It’s light, fruity and perfect for Spring teas and Summer evenings after a saintly dinner.  I mean, it has fruit inside *and* on top so it has to count for at least one of your five a day, no? 😉

We enjoyed ours served with some creme fraiche.  It was a nice change from fresh cream but either are great accompaniments really.  Let me know if you try this recipe in the comments below and tell me how you enjoy yours!
