Is anyone still reading this old blog of mine?!  Once again work and life have forced my wee corner of the internet to take a back seat and once again I can only apologise!  Does anyone else ever feel like face-planing the bed when they get home from work?

Between work and sleep I managed to stay awake just long enough to shoe horn in a few wee trips here and there setting sail in Scotland and taking a wee jaunt to Iceland – more on those later!  I’ve accumulated lots of wee bits to share with you so you can hopefully hear a lot more noise coming from Tales of Adventure in the coming weeks.

How to: Fail-safe boozy brownies

By the time you read this post I will be on my merry way north of the border to bonny Scotland in search of a long weekend on the high seas.  Well, high-ish seas: I’m off on a wee sailing trip with some pals and what better way to mark our maiden voyage than with some boozy treats you can eat and drink.

Enter Valhalla Brownies.  Shock horror, another recipe from my favourite Scandilicious baking book.  I’ve made these tempting treats a few times now – for Fridays in the office; for my birthday and, well, just for the sake of having something nice with a cup of tea and every time they have been delicious to eat and fuss free to make.

Established Coffee: The best brunch in Belfast

When the 2011 MTV European Music Awards rolled into town Snow Patrol frontman Gary Lightbody excitedly remarked “Walking about Belfast at the moment – it doesn’t know itself”.  (If you missed it, check out this video of Snow Patrol’s performance of ‘Run’ at Belfast City Hall – he looks pleased as punch to be performing to the home crowd and so do the thousands of people singing along with him.  I love it!)

Celebrating Easter with Crème Egg Brownies

If you haven’t totally sickened yourself with copious amounts of chocolate already then these brownies may well be right up your street.  I made these last week and they went down a storm in the office and at home.  A word of warning to the wise: each brownie will have half a creme egg nestled in amongst the spongey goodness.  If that’s a touch too much then have a look for mini Crème Eggs to pop in instead.

The best pancake recipe for a lazy weekend brunch

Spiced Berry Pancakes Title PageThe eagle-eyed among you may have noticed something of a radio silence from the blog these past few weeks.  At the beginning of the month I celebrated my birthday and welcomed a bit of a nasty virus that took up the whole first week of my new year so I’ve been playing catch up ever since.  My apologies!  I hope this delicious recipe will go a little way to making up for the lack of posts in this timeframe!

I found the basic pancake recipe in time for Shrove Tuesday and have been tweaking and trialling it since to make it work better for me.  The pancakes you get are quite thin and the batter is quite watery but the results are finger-licking good.  I hope you enjoy eating them as much as we have in our house!
